Chicken and Vegetables in Foil
½ cup bottled bbq sauce or ¾ cup light fat-free Italian dressing
2 skinless, boneless chicken breast (halves)
2 medium potatoes, scrubbed or pealed, thinly sliced
1 onion, sliced into rings
1 handful frozen Brussels sprouts or cabbage wedges or broccoli/cauliflower mix
2 fresh ground pepper
Spread ½ of the bbq sauce or Italian dressing in the center of one piece of foil. Layer chicken breast, potatoes, onion and remaining sauce on the foil in the order listed.
